Bajre ki roti is a simple yet delicious combination which is made using bajra millet which is a very popular and healthy flatbread that is relished across Rajasthan. Though it can be consumed with any vegetable dish or kadhi but mostly it is served with onions and Lasun ki chutney which is saucy preparation made with garlic. 3. Panchmel ki Sabzi

 

It is quite a popular, healthy and delicious dish from Rajasthan that derives its name from the amalgamation of five ingredients which are used to make it. This tremendously juicy and dry vegetable dish is made using five vegetables seasoned with a mix of aromatic spices and gets its tangy flavour from the use of dried mango powder which is known as amchur. It is best served with roti/chapatti and rice.
 

4. Khichdi

 

Whenever we think of Khichdi, we believe it is a wholesome and healthy meal which is made using rice and different pulses. However, people of Rajasthan have some inventive and nutritious preparations of khichdi that are created by making use of wheat, jowar and bajra in place of rice. Some of the famous ones are Gehun ki Bikaneri Khichdi which is made using wheat and moong dal that can be best had when served with ghee, curd and mango pickle; and Bajra khichdi which is made of bajra black millet  and yellow moong dal split yellow gram and best when had with either curd or raita.
