This is another dish which is prepared using lamb. It is basically made from a lamb spiced with what is known as loomi. Loomi is made using dried, ripe limes and salt water. The lamb is then cooked into a stew along with the tomatoes and rice. It is a prominent dish in Dubai and gives a flavour which is unique, sharp, spicy and rich. Cloves, cardamom, cassia bark, turmeric, and baharat are used in its preparation. It is quite an impressive dish.
