Often known as the "Millennium Egg", Century Egg is one of the traditional Chinese delicacy and amongst the top likes in Taiwan. Unlike the name, the egg is not thousand year old rather it is marinated in an alkaline mixture of lime, tea, salt and wood ash for several weeks or months. During the process, the shell turns aged and yolk develops in to rich, pungent flavor compounds. It is garnished with condiments, sesame oil and soy sauce that gives a distinctive taste to the egg.
